As someone who’s pretty much made a career out of sipping suds, I can say it’s a tough job, but somebody’s got to do it. And in the bustling beer scene of San Antonio, there’s no shortage of beer geeks eager to take on that weighty responsibility.

It wasn’t all that long ago that the Texas craft beer landscape was as barren as the Chihuahuan Desert. But thanks to some innovative brew masters and a few key legislative changes, the state has blossomed into one of the country’s premier destinations for creative, high-quality beers.
As the folks at KERA News reported, the 2013 Texas legislature enacted the “largest overhaul of the beer industry in 20 years.” This landmark legislation allowed small breweries to sell their products directly to customers in their tasting rooms, rather than going through the traditional distributor model. It was a game-changer that paved the way for the craft beer boom we’re seeing today.

So who are the masterminds behind San Antonio’s thriving craft beer scene? I had the chance to sit down with a few of the city’s top brew masters to get the inside scoop on what makes them tick, their brewing philosophies, and the wild rides they’ve experienced in this ever-evolving industry.
Tom Fiorenzi, Gambrinus Brewing Company
As the Director of Brewing Operations for the Gambrinus Company (the fine folks behind Shiner Beer), Tom Fiorenzi has quite the impressive resume. With over three decades of experience under his belt, he’s seen the industry transform from a virtual “brewery desert” to the vibrant craft beer mecca it is today.
“When I first started out, beer was basically just ‘alcoholic soda pop,'” Tom chuckles. “There wasn’t a whole lot of thought or passion behind it. But then I discovered the true artistry and science involved in crafting these complex, nuanced flavors. That’s what really hooked me.”
And Tom’s dedication to his craft is evident in every sip of Shiner. Under his leadership, the venerable Texas brewery has managed to maintain its time-honored traditions while also embracing innovative techniques and bold new flavor profiles.
“I may be a bit biased, but I truly believe Shiner sets the standard when it comes to beer in this state,” he says with a gleam in his eye. “We’ve got 100 years of history and heritage behind us, but we’re always looking for ways to push the boundaries and keep things fresh.”
Jimmy Mauric, Spoetzl Brewery
As the head brewer at the Spoetzl Brewery – home of the iconic Shiner Beer – Jimmy Mauric has the enviable task of safeguarding one of Texas’ most beloved brew brands. And with 40 years under his belt at the historic Shiner facility, he’s definitely earned his stripes.
“This place is like a second home to me,” Jimmy says, gazing fondly at the white-brick buildings that have stood the test of time. “I grew up just down the road, so Shiner Beer has always been a part of my life. It’s an honor to carry on that legacy and share it with the world.”
But for Jimmy, it’s not just about maintaining tradition – it’s also about constantly evolving and finding new ways to surprise and delight beer drinkers. Under his guidance, Shiner has expanded its lineup to include everything from bold IPAs to smooth, easy-drinking lagers.
“The way I see it, we have to keep pushing the envelope,” he explains. “Beer drinkers these days are way more adventurous and discerning. They want variety, they want creativity, and they want quality. So that’s what we strive to deliver, day in and day out.”
Carlos Alvarez, The Gambrinus Company
As the Chairman and CEO of The Gambrinus Company, Carlos Alvarez has a unique perspective on the craft beer boom sweeping across Texas. Born in Mexico City and raised in Acapulco, Alvarez’s own journey to San Antonio has been an interesting one.
“I first came to this city back in ’68 for the HemisFair,” he reminisces. “And let me tell you, a lot has changed since then. San Antonio has really blossomed into this vibrant, culture-rich hub – and the beer scene has been a big part of that transformation.”
Alvarez’s passion for craft beer is palpable, and he’s played a pivotal role in fostering collaborative relationships between brewers from all over the world. Most recently, he played host to a group of brewers from the Canary Islands, who came to Shiner to learn from the Texas veterans and brew up a special commemorative beer.
“When you get brewers together, it’s just magic,” Alvarez says with a smile. “There’s this instant camaraderie, this shared passion for the craft. It transcends language barriers, cultural differences – it’s all about coming together over a love of beer.”
And for Alvarez, that spirit of collaboration and community-building is at the heart of what makes the craft beer movement so special. As he looks to the future, he sees endless possibilities for San Antonio to cement its status as a premier destination for beer enthusiasts.
“The way I see it, the best is yet to come,” he declares. “We’ve got all the right ingredients here – the history, the culture, the innovative minds. Now it’s just about continuing to push the boundaries and share this liquid art with the world.”

As I sip my latest craft creation – a beautifully balanced, hop-forward IPA from one of the city’s rising stars – I can’t help but feel a deep sense of admiration for the visionaries who have transformed San Antonio into a beer lover’s paradise.
